Salata de quinoa reprezinta un meniu light, bogat in nutrienti care e binevenit in zilele de vara.

Boabele de quinoa se gasesc proteine mai usor de digerat decat cele din carne. Boabele de quinoa sunt bogate in vitaminele A, C, D, E, K si vitamine din grupa B-urilor. In plus, sunt o sursa buna de fier, calciu, crom, cupru, fluor, iod, magneziu, potasiu, seleniu, zinc. Datorita vitaminelor si mineralelor, quinoa stimuleaza sistemul imunitar.

Ingrediente

  • 1 ceasca de quinoa rosie
  • 1 ceasca de seminte de pin prajite
  • 1 ceasca de afine uscate tocate marunt
  • 2 castraveti englezesti mici, curatati de coaja, spalati fara seminte si tocati in cubulete
  • 113 grame de branza feta taiata in cubulete
  • 2/3 de ceasca cu patrunjel proaspat, spalat si tocat
  • ¼ de ceasca cu suc proaspat de lamaie
  • 1/3 de ceasca de ulei de masline
  • sare dupa gust

Mod de preparare

Quinoa se pune intr-un vas si se spala sub jetul de apa rece pret de 1 minut. Se transfera apoi intr-un vas mai mic si se adauga peste quinoa 2 cesti cu apa. Se acopera vasul cu un capac si se lasa la foc mic sa fiarba pret de 15 minute. In tot acest timp quinoa ar trebui sa devina moala.

Dupa ce a fiert quinoa se da deoparte.

Separat, intr-un alt bol, se amesteca castravetii, afinele, branza feta, patrunjelul, semintele de pin si quinoa rece.

Intr-un alt vas se prepara sosul pentru salata din suc de lamaie, ulei de masline si sare. Sosul obtinut se adauga peste salata si se mai amesteca .

Salata se tine in frigider pret de o ora.
