Friptura de miel cu legume la cuptor

Pe langa traditionalele oua rosii, drob, pasca si cozonaci, cu ocazia sarbatorilor de Paste cei mai multi dintre noi alegem sa gatim si friptura de miel.

Iata o reteta gustoasa de friptura de miel cu legume la cuptor.

Ingrediente

  • 1 pulpa de miel din spate
  • 1 bucata de cotlet cu coasta
  • 1 legatura usturoi verde
  • 3 radacini de pastarnac
  • 1-2 morcovi
  • 1 buc telina
  • 2 cartofi
  • 2 linguri otet balsamic
  • 1 pahar de vin rosu
  • busuioc
  • cimbru
  • dafin
  • sare
  • piper

Mod de preparare

Taiem pulpa in zona unde este mai subtire, iar coastele le desfacem in bucati mai mici.  Carnea se spala bine si se condimenteaza cu sare, piper, cimbru, busuioc, apoi se aseaza intr-o tava mai inalta.

Curata si taie in bucati mari pastarnacul, telina si morcovii, apoi aseeaza bucatile de legume in tava. Usturoiul se curata si se taie in bucati pe lungime, apoi se distribuie peste miel si legume. Adauga in tava cam 700 ml apa fierbinte si otetul balsamic, apoi pune tava la cuptorul incins, la ~180 grade (foc mediu).

Dupa ~jumatate de ora scoate tava, intoarce si da-o din nou la cuptor, inca jumatate de ora. A venit momentul sa adaugi in tava cartofii curatati si taiati bucati mari, vinul,  sare si piper daca mai este nevoie, foi de dafin, cimbru si busuioc. Acopera tava cu folie alimentara si introdu din nou friptura in cuptor, apoi dupa 20-30 de minute, ridica folia, intoarce friptura si las-o din nou in cuptor inca 10-15 minute, stropind-o de doua-trei ori cu sosul din tava.

Mielul lasa din grasime asa ca nu este nevoie de ulei. Dupa ce s-a rumenit frumos se opreste focul si se lasa cateva minute in cuptor.

Se aseaza pe farfurii bucatile de carne de miel, legumele din tava, se stropesc cu putin sos si se asezoneaza cu usturoi verde tocat marunt.
